Three lesser-known summer cocktails to try this weekend

Summer evenings are best spent with a cocktail in hand, if you ask us.

And with a full weekend of uninterrupted sun and 30-degree heat on the cards, what better time than now to try out some new recipes?

We asked three mixologists for some lesser-known summer cocktail recipes, for when G&Ts or pornstar martinis just aren’t cutting it.

Shakers at the ready, folks. 

Three summer cocktails to try this weekend:

Coco Loco cocktail

Will Rogers, head of beverage at Kricket, uses cardamom to add a little bit of warmth to this coconut-heavy cocktail.


  • 5 cardamom pods
  • 50ml coconut rum
  • 25ml coconut water
  • 15ml lime juice
  • 15ml Sugar Syrup (a standard 1:1 – water : sugar ratio)
  • 1 mint leaf, to garnish



The perfect aperitif (AKA, pre-dinner cocktail), the Smaquiri – created by Matt Ottley, the head bartender at Luca – mixes sweet and bitter ingredients to find the perfect balance.


  • 40ml Mezcal
  • 10ml Pineapple juice
  • 20ml Lime juice
  • 5ml Sugar syrup
  • 15ml Campari 


French Martini

This fruity martini by Scott McGlynn is the perfect post-dinner cocktail.


  • 2 parts vodka 
  • 2 parts pineapple juice 
  • 1 part raspberry liquor
