You can bake the potato at 220C for 20 minutes, and then turn the oven down to 190C and bake for an extra 45 minutes to an hour.
This method will give you a super-crispy potato skin with a slow-cooked inside.
If you’re in a rush, microwave the potato for five minutes and then cook for 35 to 40 minutes in the oven.
How to make a jacket potato
BBC Good Food has a recipe which serves four and takes just five minutes to prepare.
They suggest cooking your jackets for an hour and 20 minutes in order to get a super crispy and melt-in-the-middle result.
- 2 tsp olive oil
- 4 large baking potatoes
- 200ml soured cream
Plus any or all of the following:
- 50g cheddar, grated
- 4 crispy bacon rashers, chopped
- 4 spring onions, thinly sliced
Heat the oven to 220C/200C fan/gas 7.
Rub the olive oil over the potatoes and put on the top shelf of the oven. Bake for 20 mins.
Turn down the oven to 190C/170C fan/gas 5 and bake for 45 mins to one hour until the skin is crisp and the flesh soft.
Cut a cross on top of each potato, squeeze the sides, add the soured cream and your favourite toppings.
