Custard tarts, pancakes and Victoria sponge are third lockdown baking trends

Back in March, bakers everywhere were whipping up banana bread and sourdough.

Then in November, with the second month-long lockdown, cinnamon buns were a popular treat to try out.

This time round, it looks like custard tarts, pancakes and a simple Victoria sponge cake could be the big bakes, according to Waitrose.

Searches for all three on the supermarket’s recipe website have jumped since this time last year and are up from this time last week too, after the government’s announcement on Monday.

The Victoria sponge is a straightforward classic bake, plus it’s perfect to make with kids.

Waitrose says searches are up 1,835% on last year and 64% since last week.

Views for their classic recipe have increased 50% since 2020 and views of the vegan version – perfect for veganuary – are up 200% from just last week.

Another nostalgic bake people are keen to check out is the custard tart.

Although a little more advanced, you can take shortcuts by buying pre-made pastry.

Waitrose says views of Bake Off contestant Martha Collinson’s rhubarb & custard tartlets are up 25% since the third lockdown was announced.

The final baking prediction for lockdown 3.0 is pancakes.

Usually, searches for recipes for the brunch staple peak around Strove Tuesday in February but bakers are trying them out even earlier this year,

Pancakes can be very versatile and are another great option to cook up with kids because they’re quick and simple.

Searches of ‘pancakes’ are up 148% on Waitrose.com vs. last year and 50% week on week.

So get your whisk out and get baking to fill those long lockdown days.
